“A fun and productive fishing trip with Wicked Fishing Charters out of Mandeville Louisiana. Nothing like fresh Speckled Trout to make a classic New Orleans dish, Trout Pontchartrain! In this Trout Pontchartrain sauce, I used “Crawfish” instead of blue crab meat, and it was so good! Special thanks to Cap’n Andy Jones!”
