Cooking a Cajun Crawfish Pie

Crawfish, or crayfish, are an iconic part to southern cuisine.  Rus shows us how to make a cajun crawfish pie in this segment of Smoky Ribs BBQ & Southern Cuisine.

First part of the dish is getting a roux prepared by melting two sticks of butter and adding flower similar to starting your gumbo base.  Rus then adds the cajun trinity of onion, which stops the roux’s browning, followed by bell pepper and celery.  When your base is completed you can add fresh crawfish, but if you’re trying to be quick you can also use packaged crawfish, making sure they come from Louisiana and not China or Spain.  Add in some rice and you’re ready to make your pie or empanadas.
