Rus replaces pork livers with chicken livers for this boudin recipe. After everything is blended well and the seasonings have had time to meld, Rus cooks it all down adds in his signature scallions and cooked rice. The next step is to run it all through a meat grinder adding back liquid until you have a consistency you like and then place in the fridge before making the mixture into balls.
