Mullet is bountiful in the coastal waters of Mississippi and are celebrated in Gautier at their annual Mullet Festival. The cultural heritage of the fish is celebrated far and wide, but when we’re talking smoked mullet it’s known as “Biloxi Bacon” to most. With butterflied fish prepped for the grill, Rus shows a Southern Florida style sauce to add to the mullet and a more traditional style of just blackening seasoning.
